			<content:encoded><![CDATA[<p>Chicken Noodle (Mi Ayam) is one of generic for any meal time type of food in Indonesia.<br />
It positioned at the same spot as fried rice (Nasi Goreng), padangnese platter (Nasi Padang), Chicken Porridge (Bubur Ayam) and Meatball soup noodle (Mi bakso). </p>
<p>You see, I am an ordinary Javanese women. I like chicken noodles, but I never took it seriously as a reputable dish. I tasted restaurant and branded bowls of chicken noodles. It never ranked as high-end food for me.</p>
<p>Then I married to a foodie family. Who took everything they eat seriously.  My father in law will go climb the mountain or swim across the sea to find a tasteful meal. </p>
<p>It did happen for a chicken noodles from Medan. </p>
<p>The humble restaurant located at the corner Gwandu Street or Jl. Perniagaan, Medan. You won&#8217;t miss it. It will be the busy vendor at the afternoon until midnight. It called &#8220;<a href="http://www.insidesumatera.com/?open=view&amp;newsid=465&amp;go=Pendekar-pendekar%20Mie%20Kota%20Medan" target="_blank">Mi Ayam Akong/ Acim</a>&#8220;. </p>
<p>The creator is Mrs. Acim. Her magical hands delivered an extraordinary recipe for the Ultimate chicken noodles. </p>
<p>Now, her son Akong, continuing her mother&#8217;s path to keep the recipe at their family.</p>
<p>God knows how many chicken noodle I&#8217;ve tasted. From restaurants, street vendors, home-made, five stars hotel, branded, chained, food court style, etc. Some of them are great, some good, most of them mediocre if not bad. </p>
<p>Just like the other delicacy from Medan I&#8217;ve tasted, I knew it from reheated ones. My mother in law brought back from Medan, put it on freezer. If we want to eat it, we melt it with microwave and boil the broth. Even when the food was post freezing dormant, exposed to multiple heat exposure still make me fall in love. </p>
<p>Yeah, I&#8217;m in love with this dish without tasting the fresh ones. </p>

<p>What&#8217;s to love from a simple chicken noodle?<br />
The answer is, What&#8217;s NOT to love?</p>
<p>The egg noodles, it&#8217;s freshly made. Al dente enough to give you something to bite for, but not rubbery. The brown sauce used to coated boiled noodles is to die for.<br />

I&#8217;m guessing it is reduced broth from shrimp&#8217;s head, chicken bones and more. They are certain that their noodles Halal or pork free. </p>
<p>A small bowl of clear broth the served with. Silent tune that sings &#8220;chicken broth&#8221; in the subtle way yet still palatable. Seasoning is excellent in most harmonious way between simple salt and pepper.<br />

<p>The shrimp dumplings is the prima donna of the dish. A tube form of dumpling, using tofu skin to rolled the shrimp meat then deep-fried. While wait our bowls of noodles ready we munch on the dumplings dipped it to their special sambal. Just in minutes me and my husband finished five little serve plates of it. Again, the seasoning is superb. </p>

<p>For your information,  my taste buds are sensitive to salt. I will know and despise when the food is way too salty. Most of chinese food are too salty for me. But not this one! Mr. Akong and his daughter seasoned the dumpling very lightly so the shrimp still shines.  </p>
<p>The other condiments to the noodles are half of boiled egg, shredded chicken, scallions, cakwe, fish meatball and fried red onions. Every little item is prepared carefully. The boiled egg cooked perfectly with only slightly grey ring around the yolk.<br />

<p>The sambal and pickled chillies make this dish a bowl of heaven with rainbow, angles and everything. I&#8217;m flying and speechless. Suddenly my eyes filled with tears of joy. </p>

<p>This is my ultimate chicken noodles of all time. After this, I just can&#8217;t take any mediocre ones. </p>
<p>Whenever you got a chance to visit Medan at North Sumatera, Indonesia you should ask the local about this. Remember the name: Mi Pangsing Acim/ Akong at Perniagaan street.</p>

			<content:encoded><![CDATA[<p>Bila saya mendengar kata Balap, ingatan saya melayang pada kaki-kaki kekar atlet mengayuh sepeda atau derungan mesin motor di arena balap yang berdebu.<br />
Di Medan, saya temukan penggunaan lain kata Balap. Disana, kata balap diletakkan berdekatan dengan hidangan berbasis mi dan variasinya. Entah kwetiaw, mi biasa hingga bihun.</p>
<p>Berhubung saya bukan orang Medan, pertama kali saya mendengar mengenai mi balap ketika mencicipi sebungkus kwetiaw goreng beku yang baru saja dihangatkan. </p>
<p>Ternyata, saking lezatnya, keluarga suami yang lama tinggal di Medan seringkali membawa buah tangan berupa kwetiaw atau mi goreng balap matang yang kemudian dibekukan agar tahan lebih lama. Awalnya saya agak skeptis, masa sih kwetiaw goreng saja harus yang asalnya dari Medan? Apa kurang banyak tukang mi tek-tek hingga restoran yang menjagokan kwetiaw goreng dalam menunya di Jakarta ini?</p>
<p>Kemudian seperti yang seringkali terjadi saat saya bersikap sinis, saya kalah telak. Saya menundukkan kepala dan mengakui kenikmatan sebungkus kwetiaw goreng yang dibangkitkan kembali pasca dormansi es-nya. Angan-angan saya melayang, bila yang sudah dibekukan saja begitu enaknya bagaimana rasanya bila saya coba langsung setelah matang dalam keadaan panas? </p>
<p>Biar saya jelaskan disini kawan pembaca yang bersikap apriori dan sedang mengerutkan keningnya saat ini. </p>
<p>Hidangannya sendiri sebetulnya amat sederhana, hanya berupa kwetiaw atau mi atau bihun goreng dengan sedikit sayur dan telur. Itu saja. Tidak ada isian yang aneh-aneh atau hebat seperti daging, ikan atau apapun. </p>

<p>Saya paling suka kwetiaw gorengnya, walau setelah dicairkan di microwave lalu dihangatkan dengan wajan diatas kompor, konsistensinya tidak berubah. </p>

<p>Lembaran kwetiawnya berukuran lebih tipis dari kwetiaw basah pada umumnya, dengan lebar serupa sehingga terlihat nyaris transparan. Entah bahan pembuat kwetiaw tersebut berbeda dengan umumnya atau cara memasak tingkat tinggi yang digunakan penjualnya, rasanya sangat ringan. Bahkan tidak perlu mengunyah, lembaran-lembaran kwetiaw tersebut langsung hilang dimulut. </p>
<p>Untuk penggila mi dan pasta, mungkin akan setuju dengan umpatan <a href="http://www.joebastianich.com/" target="_blank">Joe Bastianich</a> juri acara <a href="http://www.fox.com/masterchef/" target="_blank">Masterchef US</a>: &#8220;<em>The pasta is overcooked</em>!&#8221; </p>
<p>Tidak <a href="http://busycooks.about.com/od/glossary/g/aldente.-8El.htm" target="_blank">al dente</a> memang, tetapi menurut saya tidak juga kelewat matang. Ketahanan konsistensi inilah yang membuat saya heran. Bila mi atau pasta terlalu matang, ia tidak akan mampu menahan bentuknya dalam waktu lama apalagi melalui pemanasan berulang. Jangan lupa, kwetiaw yang digunakan juga relatif lebih tipis dibanding mi. Semakin kagumlah saya.</p>
<p>Ketika minggu lalu saya berkesempatan ke Medan,  saya sempatkan langsung pergi ke kedai Mi Balap langganan keluarga suami. Hanya sebuah semi-kedai,  berupa susunan kursi-meja beberapa baris di pekarang rumah seseorang yang atasnya diberi atap tenda. </p>
<p>Ternyata, Mi Balap di Jalan Darat no. 52 ini merupakan warung pertama yang menelurkan alternatif hidangan sarapan cepat saji di Medan. Kini konsepnya ditiru banyak penjual mi di lokasi yang berbeda.<br />
Namun bagi foodie lokal sejati seperti tante saya, kedai inilah yang rasa dan kualitasnya terjaga sejak 30 tahun yang lalu, tetap nomor satu. Nampaknya banyak warga Medan yang setuju dengan tante saya, karena hidangan ini hanya tersedia semenjak pukul 7 pagi hari hingga menjelang siang saat habis. </p>
<p>Disinilah saya melihat arti &#8220;balap&#8221; yang sesungguhnya pada sebuah hidangan mi balap. Para foodie harus melihat, mengalami baru kemudian mencicipi hasilnya. Sebuah pertunjukan istimewa yang mengejawantahkan arti hidangan cepat saji dalam sebuah konteks berbeda.</p>
<p>Seluruh penjualnya adalah wanita keturunan tionghoa, etnis yang memang terkenal sebagai penjual berbagai jajanan top di medan. </p>
<p>Mereka mengorganisir kedainya bagai prajurit. Ada yang bersenjatakan handuk dileher, diposisikan sebagai pengaduk dan pemasak dekat tungku. Ada yang  fokus menghadapi pembeli sekaligus pembagi porsi hidangan (akan dijelaskan kemudian). Adapula yang fokus pada ketersediaan piring, gelas, sendok, dll merangkap penyaji minuman serta hidangan jadi. </p>
<p>Sang komandan yang hanya turun pada saat-saat penting ketika dibutuhkan keterampilan (dan pengalaman) untuk meracik bumbu pada bahan mentah.<br />
Seluruh prajurit yang terlibat adalah keluarga Cici Mei Mei, dikelola secara turun temurun dari Ama dan Popo (nenek dan ibunya). Semuanya terlihat sigap bergerak cepat dan tepat menjalankan fungsinya masing-masing.<br />

<p>Jadi sistem &#8220;balap&#8221;-nya seperti ini,<br />
Kita berdiri didepan pos terdepan, yang merupakan tempat pemilihan menu sekaligus pembagi porsi. Lalu langsung ke meja makan. Sementara seporsi pesanan kita berusaha mengejar secepat mungkin. </p>
<p>Pembeli hanya disediakan alternatif mi, kwetiaw, atau bihun goreng. Hanya ada 3 menu yang ditawarkan, dan spesialisasinya memang hanya versi &#8220;goreng&#8221; tanpa rebus. Saat memilih, pelanggan boleh membuat campurannya sendiri, mi campur bihun atau kwetiaw campur bihun, atau campur ketiganya atau campur nasi.<br />

<p>Selain pilihan bentuk karbohidrat yang disuka, kita juga dapat minta dimasakkan kembali atau langsung makan begitu saja. Bukan mentah tentu saja, karena pada pos pertama ini terdapat 3 baskom besar berisi hidangan yang tiga perempat matang. Dapat dimakan langsung atau dimasak kembali. Selanjutnya, pembeli juga dapat minta untuk ditambah telur atau tidak saat dimasak kembali. </p>
<p>Pengetahuan diatas memang hanya dimiliki oleh pelanggan lama. Berdiri saja disamping Cici dibawah ini, lalu pesan variasi mi yang disuka. Saya sendiri memilih kwetiaw campur bihun dimasak lagi tambah telur.<br />
Bagi orang baru, akan sedikit menegangkan karena harus mencari tahu sistem dan bahasanya. Ketegangannya tidak jauh berbeda saat saya pertama kali mencoba memesan kopi di Starbucks.<br />

<p>Setelah kita pesan, Cici di pos satu tadi langsung menakar mi, bihun dan atau kwetiaw dalam piring-piring melamin. Untuk yang tidak minta dimasak, piring tersebut sekaligus menjadi piring saji tinggal tambah sumpit dan sambal saja. Bagi yang minta dimasak lagi, piring tadi digeser ke sisi kanannya yaitu pos kedua.<br />

<p>Pos kedua ini seperti arena balapnya. Disinilah Cici Mei Mei dan saudaranya berolahraga dan membalap diri sendiri untuk menciptakan hidangan dalam waktu sekejap. Sepertinya benar-benar sekejap karena tidak sampai lima menit kemudian sepiring kwetiaw-bihun goreng plus telur sudah mengepul diatas meja kami.<br />

<p>Saya terpana dengan kelincahan tangan dan goyangan badan si Cici saat menggongseng wajan besar diatas tungku. Tambahkan sedikit minyak, masukkan telur, masukkan sepiring mi yang sudah ditakar tadi lalu sreng-sreng-sreng dalam kecepatan cahaya yang sulit ditangkap kamera.<br />

<p>Pada saat yang sama piring saya sudah memanggil-manggil. Inilah saatnya saya merasakan kwetiaw balap yang baru masak, setelah 3 tahun merasakan versi yang dihangatkan kembali.</p>
<p>Suapan pertama saya tidak ingin menambah sambal. Saya ingin menikmati rasa asli masakan tersebut. Keharuman bawang putih yang dimenjadi bumbu dasarnya sungguh terasa. Begitu kwetiaw-bihun tersebut hinggap dilidah, tidak perlu dikunyah lagi langsung hilang begitu saja. Meninggalkan rasa gurih, sedikit sensasi asap dan sentuhan manis yang mengesankan. </p>
<p>Suapan berikutnya saya tambahkan sambalnya hingga maksimal. Sambal ini juga senjata rahasia sang penjual. Rasanya sangat berbeda dengan sambal mi goreng dari restoran manapun. Bahkan pembeli hanya diberikan dalam mangkuk mini untuk sambalnya. Bila suka pedas, harus meminta tambahan mangkuk mini tadi pada pelayannya. </p>
<p>Ledakan rasa pedas, gurih, gigitan asam dan keseimbangan indah antara asin dan manis serta tekstur kwetiaw bihun yang masih bisa digigit namun langsung lumer dilidah melebihi ekspektasi saya.<br />

<p>Mi balap, tidak hanya cepat disajikan, cepat pula dihabiskan. Hubungannya dengan olahraga adalah, proses memasaknya merupakan olah raga tersendiri bagi penjualnya. Sedangkan upaya menahan diri untuk tambah porsi kedua adalah olahraga mental bagi penggemar seperti saya.<br />
Oh ya, tidak lupa kami memesan dua puluh bungkus untuk dibawa ke Jakarta. Sekarang sudah tersusun rapi menjadi penghuni lemari beku (freezer) kami.</p>

			<content:encoded><![CDATA[<p>If you hear the word sacrifice, would you ever think about food? I do.<br />
For so many reason, talking about food not always fun, happy and glamour. Most of the time people shed their sweat, tears and blood to be able to feed their family or harvesting a good produce.<br />
Well, although I&#8217;m discussing sacrifice here but I don&#8217;t want to make us too depressed. I find the simplest yet gracious sacrifice of food is on our backyard.</p>
<p>My parent&#8217;s backyard had starfruit trees, sugar-apple trees and pomegranate trees beside pandanus, common bushes and flowers. Since my parents only live by them selves, most of the fruit were un-eatable. My dad is very strict about not wasting food away, he even eat all the left overs or gave them to the wild kittens rather than throw them away to the garbage bin.<br />
Regarding the fruits, after sending to all his neighbor until they got bored, he let it fall to the ground. Every now and then I would see them lying around in the ground for couple of days until dissolved by nature. </p>
<p>Rising plant is not easy. Neither bushes, flowers, grass or trees. But my parents have the best soil, everything grow easily. </p>
<p>My family and I assume, that phenomena happens due to the essence of star fruits, sugar apples and pomegranates penetrate the soil and nourish it. They allow their strong-snappy flesh go rotten, liquefy then disappear to the ground. </p>
<p>I see it as a self sacrifice gesture from these fruits (with a little help from my dad, off course). Gave away their juicy and nutritious body to nature, allowing another living organisms to bloom.</p>
<p>All the sugar apples are gone a few weeks ago. The pomegranate still hanging strongly to their stalk, not their time yet. Now, is the starfruit&#8217;s turn. </p>
<p>This is a sad but beautiful story from my parents backyard.</p>

While he were busy managing his patients, I enjoy the serenity of an empty office, fast internet access and the smell of freshly brewed coffee from the coffee maker.<br />
This is a new coffee maker, and I like observing how the first drop of black liquid came out from the valve to the cup. Too bad the machine too noisy, it annoyed me eventually. But my husband said, sometime he appreciate the noisy sound. It remind him that he&#8217;s not alone, at least with the coffee maker.<br />
Speaking of this machine makes me think about the coffee drinking culture. Indonesian usually drink mud coffee at the afternoon or maybe during nightshifts. But we are originally not accustomed to use coffee maker. This is another culture phenomena, as a spreading infectious addiction to freshly grind then brewed coffee. Not enough getting it at our nearest cafes, we need it available at our office.<br />

<p>Sosis tebal berukuran pendek ini berbahan utama daging dengan bumbu bawang putih yang ekstra. Biasa disantap bersama asinan kubis dan mustard.</p>
<p><strong>Drei im Weggla</strong></p>

<p>Sosis berukuran ramping ini umumnya dimasak agak hangus di atas panggangan terbuka. Jarang sekali yang memasaknya dengan cara direbus atau digoreng.</p>
